Ingredients
- 450 g (1 lb) large shrimp, peeled and deveined
- 2 tablespoons butter, divided
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 3 cups of your favourite vegetables, cut into bite-sized pieces
- ½ teaspoon Italian seasoning
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley (optional)
Vegetable options: Choose 2–3 favourites, such as zucchini, bell peppers, asparagus, broccoli, green beans, mushrooms, or sugar snap peas.
Directions
- Prepare the shrimp. Pat the shrimp dry with a paper towel and season lightly with salt and black pepper.
- Prepare the vegetables. Wash and cut your chosen vegetables into bite-sized pieces.
- Cook the vegetables. Heat the olive oil and 1 tablespoon butter in a large pan over medium-high heat. Add your chosen vegetables and cook for about 4–5 minutes, stirring occasionally, until they begin to soften.
- Add the garlic. Add the minced garlic and cook for about 30 seconds, stirring so it does not burn.
- Cook the shrimp. Add the shrimp, remaining butter, and Italian seasoning. Cook for about 2–3 minutes on each side, or until the shrimp are pink and opaque.
- Add the lemon. Drizzle the lemon juice over the shrimp and vegetables and gently toss everything together.
- Serve. Sprinkle with fresh parsley, if using, and serve warm.
Serving & Storage Serve the garlic butter shrimp and vegetables on their own or with steamed rice, cauliflower rice, noodles, or a simple green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days. Allow the food to cool before refrigerating.
Reheating Pan: Reheat gently in a pan over medium-low heat for a few minutes, stirring occasionally, until heated through. Microwave: Place in a microwave-safe dish and heat in short intervals until hot.
