Ingredients
- 2 cups cooked rice (preferably cold leftover rice)
- 2 eggs
- 1 tablespoon oil (vegetable or sesame)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1/2 cup frozen mixed vegetables (optional)
- 1/4 teaspoon black pepper
- Salt to taste
- 2 Spring onions, chopped (for garnish)
Directions
- Heat the oil in a large pan or wok over medium-high heat.
- Add the minced garlic and stir for 10–15 seconds, until fragrant.
- Add the eggs and scramble quickly until just set.
- Add the cooked rice and gently break up any clumps with a spatula.
- Add the soy sauce, mixed vegetables (if using), black pepper, and a little salt. Stir well.
- Cook for another 2–3 minutes, stirring frequently, until the rice is hot and everything is well combined.
- Garnish with chopped spring onions and serve immediately.
Serving & Storage
Serve the egg fried rice hot on its own or with your favourite vegetables, chicken, shrimp, or tofu.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Cool the rice promptly before refrigerating.
Reheating
Pan: Reheat in a pan over medium heat for 3–5 minutes, stirring frequently, until steaming hot throughout.
Microwave: Place in a microwave-safe bowl and heat until steaming hot throughout, stirring halfway through.
Tip: Reheat leftover rice only once.
