Garlic Butter Shrimp & Veggies is a quick and colourful dinner made with juicy shrimp, fresh vegetables, garlic, and butter. Ready in about 20 minutes, this simple one-pan meal is perfect for busy weeknights when you want something fresh, satisfying, and easy to prepare.

Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 small zucchini, sliced (optional)
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • ½ teaspoon salt, or to taste
  • Fresh parsley for garnish (optional)
  • Lemon wedges for serving (optional)

Directions

  1. Pat the shrimp dry and season lightly with salt, pepper, and paprika.
  2. Heat olive oil in a pan over medium-high heat.
  3.  Add the shrimp and cook for about 2–3 minutes per side, until pink, opaque,    and cooked through. Remove from the pan and set aside. 
  4. Add butter to the same pan. Once melted, add garlic
  5. and cook for 20–30 seconds until fragrant.
  6. Add broccoli, peppers, and zucchini. Stir-fry for 3–4 minutes until slightly tender.
  7. Return the shrimp to the pan and toss to coat everything in the garlic butter.
  8. Cook for another 1–2 minutes until well combined and heated through.
  9. Squeeze fresh lemon on top and garnish with parsley.
  10. Serve over rice, pasta, or enjoy on its own.

Tips for the Best Garlic Butter Shrimp & Veggies

  • Pat the shrimp dry before cooking so they sear better.
  • Don’t overcook the shrimp. Remove them from the pan once they are pink, opaque, and cooked through.
  • Cut the vegetables into similar sizes so they cook evenly.
  • Don’t burn the garlic. Cook it only briefly until fragrant.
  • Add fresh lemon at the end for a bright, fresh flavour.
